I had a chicken. And I wanted to dip some roasted chicken in something. That’s how my mind works. LOL So, I was like – what can I do. I LOVE cilantro. Look how many times I use it.

Then, I wanted to butterfly it – so I did that live on Facebook. See below:

Don’t judge me. But, this is so easy – you don’t even need a recipe!

So, here’s the recipe:

Pink Himalayan Sea Salt, to taste

2 packets of Sazon

a pinch of ground fennel seed

a pinch of smoked paprika

a pinch of cumin

a pinch of coriander

a pinch of garlic powder

a pinch of chipotle chili powder

Just combine all the spices and rub it all over the chicken – lol…done. That’s your recipe.

I roasted the chicken in a cast iron skillet for about 45 minutes and I served it with the cilantro chimichurri found here.
