Ahhh, the mighty pork chop. It’s so versatile and there are tons of ways to cook it up. I particularly love pork chops because they don’t take forever to cook. A little marinade or rub and they’ll be cooked within 7 minutes and if you let them rest, why, you’ll be eating within 10. I love this recipe because most of these things are already lurking somewhere in your pantry. Well, the plum jelly might be a reach, but, that’s nothing a quick run to the market wouldn’t be able to solve! Here’s the recipe:

Plum & Mustard Glazed Pork Chops

-4 center cut pork chops

-2 tablespoons of butter

-1/2 cup of good plum jam

-1 teaspoon of Dijon or whole grain mustard

-1/2 teaspoon of salt

-1/2 teaspoon of pepper

-1/2 teaspoon of dried thyme

-1 tablespoon of brown sugar

-a pinch of salt

-a pinch of pepper

-a pinch of dried thyme

-2 tablespoon of olive oil

-1 fresh plum

 

1. Preheat a cast iron grill pan or skillet until it’s hot. Meanwhile, combine the jam, mustard, butter, salt, pepper, dried thyme, and brown sugar together in a bowl and microwave on high heat for 2 minutes until a the jam has melted.

2. Then, lay the pork chops out on a plate and season with a pinch of salt, pepper, and dried thyme. Then, drizzle with olive oil and rub to coat evenly.

3. Cook the pork chops on one side. While the first side is cooking, use a brush to brush on some of the glaze on the pork chop. Once the first side of the pork chops are golden brown, flip them and glaze the second side. Repeat the until the pork chops are glazed well.

4. Lastly, grill up some fresh plums to serve with pork chops. Just slice them and place them right in the grill pan to grill. When the pork chops are cooked through, remove from the pan and let them sit for 3-4 minutes before slicing.
